🥥 Next up from TT today is this easy vegan coconut cake. I used to top it with buttercream and coconut but after a reader suggestion, I now top it with raspberry jam and coconut.

@jacquelinemeldrum I have to admit that we're not vegan, but my egg intolerance flared up again at the end of last year, so I was looking for egg-free cake recipes and found your website.

I particularly like the chocolate loaf cake. It works really well with orange juice and zest instead of coffee.
