@sortius In the end, I decided to make what passes as umeboshi round these parts: plums de-seeded & cut into quarters, with salt, garlic & water. They'll probably end up dried & ground up into my perpetual fermented goodies powder (FKA Death Powder, before the chilli became too diluted).

@sortius However many days later, and already the pH is sitting around 4-3.5.
