@xexer on the Minstrel 4th you can invert the video signal, which is black on white background by default. However it was also white on black background on the original Jupiter ACE.

Also note that there are ZX80 and ZX81 BASIC *compatible* ROMs (not the original ones) on the additional ROM banks of the Minstrel 4th ROM. But I haven't tried them out yet.
