I thinned the #beetroot patch again today, as I want to use the space for my overflow tomato and chilli plants before too long. Alas, many of the beetroots were quite woody, despite their small size. That said, between the roots I could grate & the greens I kept, I ended up with 850g of beety goodness. To this, I added celery, wombok, and carrot, as well as garlic, cracked black pepper, chilli flakes, and salt. In a week or so, I will have 3.3kg of #fermented vegetables.

Almost 3 weeks later, and I can confirm it is delicious on an omelet. Later today, I shall decant it into smaller jars for redistribution and/or refrigeration.

@airshipper Yes: I only learned about the edibility/tastiness of beet greens in the past year or so, following an overgrown crop that had begun to bolt. Perhaps unsurprisingly, the greens still taste a lot like beetroot -- especially lower down on the stems.
@ghost_shit big fan of beet greens, they sell them by the bag in usa. silverbeet is the same species, minus the scary red colour and the slight sweetness
