I had the chance to cook Palestinian Rice Pot (Qudra) earlier. Palestinian Rice Pot (Qudra) is one of the staple Palestinian dishes. I’m going to share the recipe with you. It is one of my favourite dishes, I always try to cook it on the occasion. And I’m quite the chef, I always enjoy cooking for my family and my friends, and I enjoy food. ⬇️⬇️⬇️

Here are the ingredients:

1. Meat Mixture Ingredients

3 tablespoons olive oil.
Bay leaf.
1 teaspoon allspice.
½ teaspoon turmeric.
600 grams chicken (or lamb).
1 onion.
1 tablespoon salt.

2. Rice Ingredients

2 tablespoons olive oil.
2 tablespoons butter.
1 onion, sliced.
15 to 18 garlic cloves.
1 teaspoon turmeric.
1 teaspoon cumin.
1 teaspoon allspice.
1 teaspoon salt.
500 grams long grain rice.
Fried pine nuts and almonds.

Here are the steps to prepare Palestinian Rice Pot (Qudra):

Place olive oil in a pot and heat, then add the spices, bay leaves, and cumin. Add the meat and stir for 3 minutes.
Add 8 cups of water and salt to the meat, bring to a boil, and remove any foam that appears on the surface of the pot.
Leave the meat on low heat for 60 to 80 minutes until cooked through, then set it aside with the broth.

Heat the oil and butter in the pot you're preparing the rice in. Wait until the butter melts, then reduce the heat to low and add the onions and stir for 5 to 10 minutes. Then add the garlic and stir for another 3 minutes.
Add the rice, all the spices, and chickpeas and stir well. Then, saturate the rice with the meat broth. Bring to a boil, then reduce the heat and arrange the meat on top. Cover the pot and let it rest for about an hour to ensure the rice and meat are cooked through.
Add the fried almonds and pine nuts on top after the food is ready. Serve the Palestinian pot with yogurt and a vegetable salad.

Unfortunately, we need meat and chicken. This meal must have meat and chicken. But chicken is too expensive, at least 80 USD for a whole chicken, or 150 USD per kg. I’ve not eaten chicken in 2 years, I miss the taste.

It tasted delicious anyway!

@mohshbair I didn't see chickpeas in the ingredients - are you using those for the protein as you can't get chicken, or are chickpeas a normal addition?
