How to turn too much kale into just enough kale: sautée some ginger (fresh or frozen, about an inch, minced) in oil, then add kale and cook until it has shrunk down to a truly unbelievable size. Sprinkle on salt and squeeze half a lime or lemon on it. The 500g of kale I picked is only 4 servings!
