@ai6yr @InfoSecSherpa Having many vegetarian relatives for whom I used to bake a lot, I never used an egg substitute. Though they like Bob’s Red Mill egg replacer. Wacky Cake got me though my childhood and my very poor 20s.

@RobotDiver @deewani @ai6yr @InfoSecSherpa Wacky cake is a reliable standby! Makes a good spice cake. We had it often when one of my kids seemed to have issues with eggs.

We also started using powdered egg substitute in baking recipes, and it works pretty well. Nobody has an issue with eggs any more in my family, but I still stock the stuff, because it’s handy.

My favorite one is not on that list: it's chickpea flour (3 tablespoons in 1/4 cup of water per egg). Very nice gelling/binding properties, has a decent amount of protein. Fairly neutral flavor too (when cooked, is nasty raw). Makes a very good French toast.
@InfoSecSherpa I'm getting a 502 error, but apple sauce and oil has been my go to for years.
