I have 1-2 kg of #calamansi / #calamondin . It's a sour little orange originated in Philippines and cultivated in Mexico (mines comes from a neighbor's backyard). I had them in beverages but I've been told they're used in south Asian cuisine. Someone here has a #Recipe using them?

@eco_amandine pickles, if you like them. Otherwise, a very standard and popular use is to either as drinks (squeeze them with sugar and a bit of salt too, to your taste) as a form of cordial, or squeeze them over fresh fried or grilled fish and poultry. Over sliced papaya too :)
@eco_amandine They are delicious made into a chilled drink with sugar syrup, a firm favourite when visiting Malaysia (indeed I had one at lunch today). You only need to infuse a couple for a glass. Also squeeze some into sambal paste (shrimp and chilli) for extra lime flavour.

Filipino cooking is often a flavour bomb of sweet, sour, salt and umami, and the calamansi provides the sour. Try searching up sinigang, which is a soup, and adobo (and adapt depending on your dietary preferences).

Wish I could share a recipe but I learned my Filipino cooking by watching my mum in the kitchen and can't tell you the quantities, sorry!

@eco_amandine Not south Asian, and yours aren’t exactly the oranges used in these recipes, but they sound a lot closer than the oranges available to me (not to mention the orange/lime/grapefruit mix suggested as an approximation of the real thing).
