It seems to be a top, default choice in everything from MATLAB to ms excel for attaching gradients to visualisations doesn't it

Perhaps because it "feels" more rich? - visually making peaks and troughs more contrasted than a simple 2-tone gradient. Surely it'd be for aesthetic reasons more than pragmatic ones
