These are called "Dominosteine" (domino tiles in English) and are a treat from Saxony in Germany. It's a layer of gingerbread (actually "Lebkuchen"—close enough) with a layer of apricot jelly topped with a layer of persipan or marzipan, all coated in delicious tempered chocolate.

If you're in Salt Lake City, you can find these at Sigfred's Delicatessen downtown; if you're in Utah Valley, the candy section of the BYU store has huge packs.
