I think the secret is to understand your limitations and avoid adding too much pressure and deadlines on yourself.
I used to start projects in a "let's release this on Steam in x months" mindset, this never works.
I constantly get back to my main project, years in the making, still years from completion and it's important for me to have fun working on it instead of aiming for release.
Ofc that would be different if I was living from gamedev but that's not the case at all.
