the roamerBernard Haitink you have listed already. I'd add two more names for the core triangle that spans the Bruckner universe: Günter Wand and Sergiu Celibidache.
Late Celibidache performances are perhaps the most unorthodox interpretations in this set. I was fortunate to hear him conduct Bruckner's 5th live in Berlin in the early 1990s.
As a bonus: vintage recordings by Wilhelm Furtwängler, unique like everything he did.
