DON'T KNOW WHO NEEDS TO HEAR THIS, but the amount of garlic in a recipe is only a suggestion. of the barest minimum, at that.

#cooking

@blogdiva wait ... you're saying that "eat 1 clove of garlic daily" is only a suggestion? =-O
@ozoned if you roast a whole head of garlic, that's enough for one slice of toasted bread, ykwim?

@blogdiva truer words never spoken

there is never enough garlic

@MatWright @blogdiva

I once made something with too much garlic. (Once.)

@stevegis_ssg @MatWright @blogdiva saaaame  my former partner and I both love garlic, but we realised that we had maaaybe gone just a little overboard with it (by a head) in a particular crock-pot  turns out over-garlicing something eventually stops making it have more garlic flavour/aroma and starts tasting super salty

(I managed to recreate those conditions once more on my own a few years later  )

@MatWright @blogdiva

(In case you're wondering, "How is that even possible?" It was roasted garlic ravioli. The filling was mashed roasted garlic. 15 heads for 5 dozen ravioli. They were actually delicious, but after a couple of bites your mouth started to HURT in this weird way.)

@stevegis_ssg @MatWright ok... i need to try this some day. sounds amazeballs tbh
@stevegis_ssg @MatWright @blogdiva @RnDanger
"Hurts in a weird way" means you nearly have enough garlic.

@FritzAdalis @stevegis_ssg @MatWright @blogdiva @RnDanger

And with wasabi/horseradish I like to say, if your SCALP tingles, you know it's working.

@stevegis_ssg @MatWright @blogdiva Just for the record, word on the street is that @stevegis_ssg later acknowledged they might have been wrong about that assessment. 😁#garlicforthewin

@stevegis_ssg @MatWright @blogdiva when I was just learning to cook, I didn't know any better and for a recipe that asked for three cloves of garlic, I used three BULBS of garlic

That's how I learned you CAN have too much garlic 😵

@stevegis_ssg
Yes same hear: That one time when I had made Gazpacho for a friend. The moment we had the first spoon we both started laughing. That's because I'm always worried I put too little....
@MatWright @blogdiva
@blogdiva I add a pinch or two more when no one is supervising me…
@blogdiva Also, if you grate it with a microplane instead of chopping, you get a lot more flavour/oz. I don't know if you needed to hear this.
@xvf17 i just did with 5 cloves of garlic and large bulb of ginger for a curry 😊
@blogdiva @xvf17 I crush, then mince. Is micro planning even better?
@msbellows @blogdiva Yes. Basically, the more cell damage you do, the more flavor is extracted.
@blogdiva, and if it is roasted garlic you can eat 10 times the amount unless you are the person who showed me the clove that was in some delicious giant lima beans I had baked. She acted like I'd made a mistake and was letting me know that she had barely escaped the poisonous clove.
@blogdiva , seriously, she acted like I'd almost killed her with my delicious plaki!
@Dr_Elizabeth97 @blogdiva That is a person who need never be given good food ever again.
@mivox @blogdiva , she is a nice person, just a bit fearful of flavor and not afraid of intimating that I nearly caused her death by garlic. People are complicated.
@Dr_Elizabeth97 @blogdiva I’m sure she would consider it a favor to be saved from good food.
@Dr_Elizabeth97 @blogdiva Clearly this person is in need of therapy.
@BruceMirken @blogdiva, I think she needs to actually taste a clove of baked garlic and get past her fear. That would be an easy 1 session of exposure therapy.

@blogdiva

Growing up, my dad was known as the guy who buys garlic by the three pound bag and uses it all before it goes bad

@blogdiva
Always multiply the amount by 10x if you're uncertain, but more is always welcome.
@glutto you get me. you really, really get me 🤗

@blogdiva "The only recipe for which one clove of garlic is appropriate is 'How To Cook One Clove Of Garlic'. Even then, you should use at least two".

I can't remember who said this but it's wisdom.

@blogdiva More garlic is nearly always a good idea!
@blogdiva You measure garlic like chocolate... with your soul.
@blogdiva We use it until the ancient eastern European vampires scream, then add some more. ;)
@blogdiva then there's the Kenji method where you prepare the garlic 3 different ways to maximize the flavour https://www.seriouseats.com/spanish-style-garlic-shrimp-gambas-al-ajillo-recipe
Gambas al Ajillo (Spanish-Style Garlic Shrimp) Recipe

This recipe calls for juicy, tender shrimp packed with plenty of garlic, yielding a simple-yet-perfect version of this traditional classic.

Serious Eats
@blogdiva @lisamelton A thousand times yes. For years we’ve joked that our family motto is “The answer to garlic is ‘yes’.”

@blogdiva

"How much garlic would you like me to add, sir?"

"If you pass on while adding it, please bring in someone to replace you. Thanks".

@blogdiva clove = head
head = entire sack
@blogdiva there is no such thing as too much
@blogdiva I'm one of seventeen known Italians who does not like garlic (nine of whom are in my family). There are some things I'll use it in, like home-cured pickles or amatraciana, but even then I low-ball it. Come and get me. 😎
@blogdiva I'm a terrible cook, the only way I can make decent stir fry veggie dish is by overloading it with garlic.
