So. I made #schmaltz with onions for the first time. It has to be a perfect winter food. Kinda works like bone broth. But I do realize it's not vegan, but a purely vegetarian diet won't get me through a New England winter. Not yet anyway.
So basically what it is, and this is my recipe.
Chicken gelatin and fat from a roasted chicken take that and roast like a half to a dozen onions in it until they are soft and dissolved and then blend the onions and fat together. I add a little cumin, peprika and garlic power, because. I made mine like a spread.
Toast a bagel, heat it up and put it on. Man, oh man. With a coffee!
My fathers parents were from Poland and there was a lot of Jewish influence and his Mom learned to make Latkas from a Jewish friend and she passed down that recipe, but Latkas are a lot of work.
This comfort food is easy, I put it in the fridge and can heat it up in the microwave and put it on a toasted bagel. If you are cold and achy, it really works well to warm you up and give you energy. I'm pretty sure it restore electrolytes as well.
My sister was like: "I'm not cooking a chicken and NOT put the chicken on the bagel". My other sister was like: "I don't eat onions like that." So...it's departure from the food I was raised with.... but I love onions and would eat them every day if I could.
