It is time... to soak dry mushrooms for Christmas eve. My grandma made this soup, then my mom, now I make the zupa grzybowa. The broth is thickened with sour cream, buttermilk and roux, the mushroom caps cut into bite sized pieces, caramelized onions float on top. I have yet to find a recipe like this Polish mushroom soup, for #Wigilia

The broth was simmered, strained and the mushrooms chopped and set aside. Sour cream and buttermilk were tempered with hot broth, 4 tbl of roux was added to 2 cups of broth then added all back to the pot and let the soup simmer and thicken with the chopped mushrooms. I will float carmelized onions on the top just befoe serving with cold, diced potatoes on the side.
