As expected, the watch switched to my shokz after going out of range from my phone. I think this is a bug. Upper-right button should be where you can select the output device. This is actually better from a usability standpoint, when it works. 😖

I can confirm that this issue has been fixed on watchOS 10.0.1.
Music app output now automatically switches to bluetooth headsets / AirPods as soon as they are connected.
