I completely agree about avoiding Whatsapp

Unfortunately, Signal or Threema only work with a mobile phone to sign up (same for Telegram which Furries absolutely demand to exclusively use)

Depending on which state you live (germany for example) it might be impossible to get a anonymous SIM card and therefore just have no useable number

Its beyond my red line to be personally verified and legally attached to a phone that can track all my movement and interactions

XMPP is a classic since decades, but has somewhat falen out of fashion after it was abandoned by Bigtech

Matrix still has issues with key sharing across multiple devices, but is emerging pretty well in Mastodon and i also have heard that Thunderbird has an Matrix client function in paralell to E-Mail

Of course, I have to use mobile internet, when I am on the move, but I can use a VPN.

And, besides, mobile phone calls and SMS seem a lot lesse secure to me.

I once had a discussion with a cyber security pro what means of communication is really safe: meet at a remote location in person, that's about it.

No risk with Threema

Its over my personal red line where i have to legally verify name, address and face photo to get a SIM card in the first place

Then anything i do around the phone around is attached to my person and can be taken for legal or illegal use

This is espically worrying me with the rising fascism

Also, I have read a bit about #Threema. If you do not provide your cell phone number, there is no information whatsover on their servers about who ist doing what that can be linked back to your phone, at leas that is my understanding so far.

Good for you. I won't b/c I might always need it in case of accident (e.g. cycling through fields, forests, etc.).
But, of course I understand that there are many countries with regimes where these concerns might be minor in comparison.
