@eeysirhc Before I met my wife, my idea of cooking was unwrapping a burrito and putting it in the oven. Once you have a certain level of skill, then you start to see things in new ways, like this bit on omelettes. I think there's a Teller quote, from Penn & Teller, that if you spend enough time on something, more than any reasonable person would expect, it turns into a kind of magic.
