decided to give lemon pesto a try tonight. that is, pesto made from lemons and not basil pesto with lemon added.
i heard about lemon pesto some time ago and have since looked up some recipes to see how people were doing it. there were many variations but it seemed simple enough. i love the brightness that citrus gives food so i was psyched to try this.
and it was goooood. best part? i usually have the ingredients on hand. not like basil, which goes bad quickly.
