It’s 32C in the shade outside, so spending the afternoon heat inside. Time to use my homegrown apricots to make apricot and ginger jam.

Simple recipe:
2kg chopped apricots
1 cup of water
2 lemons - juice and rind (finely chopped)
2 tablespoon finely chopped fresh ginger root
1kg sugar

Should make a dozen small jars of jam.

After this Jam I'll be searching for an apricot chutney recipe, to use up more of my apricots.

And make some Apricot Ratafia liquer , although subsititure almonds for the crushed kernels, as Apricot kernels contain the plant toxin amygdalin, which converts to cyanide after eating.

"Cut 25 ripe apricots in pieces, break the stones and take out the kernels, blanch these and pound them in a mortar. Put them and the apricots into a jar with a half a pound of white sugar, eight cloves, a piece of cinnamon stick and a quart of brandy, cork tightly and leave for three weeks, shaking the jar often meanwhile. Then strain and bottle."
