Worked on the game more last night.
I tweaked the car's settings for a more responsive. Something between Twisted Metal 2 and Vigilante 8.
I also started work on adding homing capabilities to rigidbody projectiles. It took forever to understand why projectile would rotate and a local to world forward force was being applied.
Turns out it was just a little too much force for its mass and zero drag. Figuring out that and the right forward direction fixed it.
