@jlgrantham Ooo that looks good. That looks like a batter but you only mention seasoning and cornflour, is it GF?
@poundquerydotinfo Nope, not a batter. It’s my take on a technique from Cajun cooking called blackening (because the spices turn into a black or very dark crust).
Melt some butter, add some lemon juice to it, then brush all sides of the fish liberally with it. Liberally cover both sides in S&P and your seasoning mix (you can make your own; I use Old Bay because it’s like Cajun). Then roll the fish on a plate full of cornflour and fry it in oil. Gluten-free.
@poundquerydotinfo The cornflour will caramelize the fish, adding a touch of extra umami flavor to the spices and fish.
Basic Cajun seasoning mix is usually some combo of smoked hot paprika, cayenne, garlic powder, pepper, basil, and oregano. But you can very that some, like adding celery salt, chili powder, marjoram, etc.
Old Bay Seasoning is really close, so I just use that.
