@Bewickwren Some of the rice was undercooked in my haste—should have done the partial cook but put it in straight after soaking — but the meat was fall-off-the-bone tender so I just need to be diligent about the part-cooked method next time.

Got it and I can see that could be a minus, but the meat sounds wonderful!
Do you prefer to soak your rice for 20-30 minutes first? I know that is a controversy.
@Bewickwren Longer! Soak for at least 2 hours and boil separately until 2/3rds the way cooked so it’s just starting to fluff before layering with the meat.

I’m surprised that the rice wasn’t fully done with that long a soak!
Is that traditional with all biryanis?
@Bewickwren Most of the recipes I’ve heard or followed do recommend that long a soak but I was worried the meat would disintegrate if I kept cooking it for another 15-20 minutes which is what the rice needed I think. I learn more with each biryani I make. 🤷🏾‍♀️
