Last weekend a #cranberry curd tart recipe came across my feed from New York Times Cooking, and I've adapted to be #keto-ish for myself. OMG. I'm waiting for the curd to cool to room temp so I can put it in the almond flour crust I made and bake it, and I keep sneaking tastes of it. It's sooo delicious. I love cranberries. I could eat them year round (and I usually buy 4-5 more bags after Thanksgiving and freeze them, so I can). I'll post pics and the recipe when it's done.

Easy Keto Pie Crust

For the Cranberry Curd:
*12 ounces/340 grams cranberries
*1 cup Besti monk fruit allulose blend (granulated)
*Zest (orange part only) and juice of 1 orange (about ½ cup)
*4 ounces/113 grams softened butter (1 stick)
*2 eggs plus 2 egg yolks

I could have experimented with Real Orange packets instead of using orange juice, to lower the carb count more, but I wanted to use the orange juice this time. (To be continued...)

Put #cranberries, sweetener, orange juice, and zest in a saucepan over medium heat. Simmer until cranberries have popped and softened (the recipe said about 10 min, but it took me longer). Transfer to a food mill or medium mesh sieve and press cooking liquid and solids into a bowl.

(Alternatively, for the most vibrant color, purée the cooked cranberry and orange mixture with an immersion blender or in a food processor or blender. Press through a fine-mesh sieve.)

(This is what I did, except I chose not to strain it.)

Whisk the butter into the warm liquid. Put eggs and egg yolks into a bowl and beat lightly. Slowly whisk a cup of warm cranberry liquid (mine was quite thick already) into the eggs to temper, then combine both and whisk together. Wipe out pot if necessary, return liquid to pot and cook over low heat until nearly bubbling and thickened, about 10 minutes. If using immediately, let cool to room temperature. (You can also let it cool and then store it in the fridge for a day.)
Pour the cooled cranberry curd into the cooled prebaked crust and smooth top with a spatula. Bake at 350 degrees for 10 minutes to set curd. Cool on a rack. Store at room temperature for up to 2 days.

Here's my finished #keto-ish #cranberry curd tart, along with the keto #pumpkin #cheesecake I also made. I should have covered the edges with foil but I was lazy, so they're kind of dark. Now both of these will chill overnight! My mom also made non-keto pumpkin flan, so I'm sure that I will have at least half of each of these desserts left over. I'm planning to freeze the cheesecake in individual slices. I think I can finish the tart myself. 😹
