Pan-seared #pork chop, #yuca fries, & chimichurri sauce. The pork is seasoned with salt, chili powder, & sage.
The yuca is peeled, parboiled, cut into sticks, and fried in canola oil. After, they are seasoned with salt, black pepper, smoked paprika, and a bit of pico de Gallo seasoning.
Chimichurri sauce is made with chopped cilantro, oregano, and parsley, minced shallot, finely diced jalapeño pepper, minced garlic cloves, red wine vinegar, salt, and generous extra-virgin olive oil.

This is a woody shrub native to South America of the spurge family, Euphorbiaceae.
The plant mostly grows in tropical and subtropical regions.
The starchy tuberous root is edible, and a major source of carbohydrates.
