There's no good way to tell if a competent someone has been in your phone.
On the "jilted lover with a remote access tool" end of the scale, copy off your phone all the stuff you want to keep, then reset your phone according to the manufacturer's instructions, and don't restore from the backup.
On the "the Mossad is hunting me" end, trash your old phone and get a new one.

@jouleian Firewalls only prevent network-based intrusion; they're not a cure-all.
If the enemy is unlocking your phone and installing apps, you need to lock your phone so they can't access it. Use a strong passphrase, not fingerprint or 4-number. If they're sending links for you to click, don't click. Change _all_ your passwords; check your accounts for third-party app access; see where emails are forwarded.
