I left it too long so it dehydrated way more than I intended.
I decided to make #zucchini fritters instead, which turned into what my wife called “zucchini parmigiana.”
After sharing some with our neighbours who gave us the zucchini, the remaining fritters went to our dog along with his raw meat diet. The fritters needed a lot of (protein rich) egg to reconstitute the zucchini, so he loved them!
One of our neighbours brought us a *massive* #zucchini recently. My wife and I had a ton of ideas of what we could use it for, but it came at a time when we were busy with so much stuff, we had to figure out something quick and easy.
I figured I’d shred it and lightly dehydrate it before freezing it, then we could use the zucchini for pupusas at a later date when we had more time. #food #cooking

One of my favorite things to do with the zucchini and summer squash abundance from my garden: https://sallysbakingaddiction.com/zucchini-sweet-potato-fritters. I use orange yams, not the yellow sweet potatoes, for the added color and because that's what I usually buy. I add fresh shredded parmesan thanks to another recipe I read and I use the pancake plate in my waffle iron to make them nice and symmetrical and avoid the mess of frying.
