Santana’s Abraxas doesn’t sit still, it moves.

A vinyl-first review of this 1970 classic, paired with a Spanish Garnacha that follows the rhythm just as effortlessly.

Wine pairing isn't complicated.

Six flavors: bitter, tannic, sweet, acidic, salty, fatty.

Match or contrast them with your wine.

Fatty steak? Tannic Cabernet cuts through it.
Salty cheese? Acidic Champagne balances it.
Sweet dessert? Your wine needs to be sweeter.

Match the weight. Light dish, light wine. Heavy dish, heavy wine.

Blondie’s Parallel Lines gave us “Heart of Glass” and “One Way or Another” , two tracks that still hit.

In this review, I dig into the vinyl pressing details (including an unexpected Israeli copy) and pair it with a crisp Provence rosé.

Clean rhythm. Cold pour. Let it play.

But wine works beautifully with Asian food, if you know the rules.

The key: the sauce dictates the pairing, not the protein.

🌶️ Spicy dishes → off-dry Riesling or Gewürztraminer (sugar tames heat)
🍣 Sushi → Champagne, dry Riesling, Albariño
🍜 Umami-heavy → earthy Pinot Noir or Gamay
🍖 Sweet glazes → fruit-forward Merlot, Zinfandel

Avoid high tannins and high alcohol with spicy food — they amplify the burn.

🦪🍷 #WineWednesday: Muscadet + Oysters

"What grows together, goes together."

Muscadet comes from where the Loire meets the Atlantic – same waters nurturing the oyster beds.

Bone-dry, briny, mineral wine. Salty, delicate oysters. Perfect harmony.

Skip the lemon – the wine does the job.

A City Ear Meets Country Soul - Needle and Vine

The pairing of Charlie Pride’s Make Mine Country with Decoy by Duckhorn Merlot creates a relaxed, welcoming experience built on comfort rather than complexity. Both favor warmth, ease, and familiarity, inviting a city ear to slow down and listen without pressure. It’s an unpretentious combination that rewards curiosity, proving that some of the best discoveries arrive gently and on their own time.

Entry 002: Notes on the 2024 Möbius Red

Posted by The Functor | Tags: #Sommelier, #NonOrientable, #WinePairing

Finding a wine that pairs with a paradox is difficult. A heavy Cabernet creates too much drag; a Pinot Noir is too derivative.

Last night, I uncorked a Klein Bottle of Möbius Red. If you haven't visited the vineyard, you must. It literally has only one side, so the sunlight hits every grape simultaneously from the inside and the outside.

Tasting Notes:

* The Nose: Hints of dark matter, recursive berries, and a strong finish of self-reference.

* The Body: Non-orientable. As you swirl the glass, the wine passes through itself without intersecting.

* The Finish: Infinite.

Serving Suggestion:

Do not try to pour this wine. Since the "inside" is topologically indistinguishable from the "outside," the wine is technically already on the table, on the floor, and in your mouth. Just accept the flow.
