Making pour over with a Beehouse that's been pre-heated and has a rinsed Melitta #4 paper filter. Coffee is a light roast, washed, Nicaraguan. Flavor profile is Citris, Ripe Fruit, Spice, Yuzu, White Grape, and Hazelnut. Water is 200F
I'm pulse brewing (fill it up a bit, let it draw down a little, refill, repeat) using 22 grams of coffee at a 1:15 ratio resulting in 330 grams of water. The water is brita filtered and 200 degrees Fahrenheit. I'm brewing using the 4:6 method: blooming with 66g of water for 45 seconds, 66 grams at 45 seconds, 66 grams more at 1:30 minutes, 66 grams more at 2:10 minutes, and the final 66 grams at 2:50 minutes.
Total brew time is roughly 4-4:30'ish seconds.
#coffee was ground on a Baratza Encore at a setting of 18 ~ see image
Resulting brew has a lack of flavor seperation, tastes muddy, and isn't very bright/clear.
What would you recommend to improve clarity, flavor, and brightness?
