Pancake Day with Indian style Besan Chilla

As it’s custom in our place we follow the tradition of Pancake Tuesday that we got to know when living in the UK. However ours are Indian style chickpea flour ones with grated courgette and lots of seasoning.

Somewhere between last year and now, I forgot that I need to crank the heat up for the steel pan to be really hot before I ladle in the pancake batter. It needs to be turned down just before the first portion goes in. On mere medium heat the inevitable happened, the first pancake was sticking to the pan and I was cursing… The next round with a properly heated up pan worked perfectly but by that time I was too lazy to take another photo.

Mushroom masala with basmati rice

I noticed a recipe in my database that looked like I had cooked it once and then forgotten about it, most likely because it was a mushroom recipe. I love mushrooms but my child didn’t for the longest time so all of these dishes got shunned. These days mushrooms are not a problem anymore, so it was time to try this again but slightly changed (I don’t have a pressure cooker, so I cooked this in a wok which takes a little longer and I also left out the cashew nuts) - and it was good. Seriously, what else would you expect from a Vegan Richa recipe? 😊

This is such a nice and filling soup that I wonder why I don’t prepare it more often.

I guess what makes this so nice is the combination of spices used:
Fennel
Onion
Garlic
Cinnamon
Oregano
Thyme

Other than that it’s vegetables (onion, tomato, potato, carrot, chickpea) and a plant based cream (or milk) with the addition of lemon juice.
