We had successfully thawed the 6.2kg turkey (13lbs) over a couple of days, and I was casually considering the spatchcock approach this year for a fun change

The morning got away from me, and when I realized it was already afternoon, the spatchcock approach became a necessity.

But it worked out very nicely. I put the stuffing in the armpits and all was good. Photos skipped, so images are left to the imagination.

I apparently forgot to post the finished pictures of my Comfort Food Sunday meal. I did such a good job! I had a POTS flare up, but I still nailed it. Everything tasted amazing and was timed perfectly. 10 out of 10!
