Was ich letztens in der japanischen Küche gelernt habe: Billige Schweinefüße (Spitzbein) "ewig" ausgekocht (Kochkiste FTW) ergeben eine sämige Suppe, die mit Knoblauch, Ingwer und Frühlingszwiebeln gewürzt eine super Basis für eine Nudelsuppe (Udon/Ramen) gibt. Das nennt sich #Tonkotsu.

Ingredients: half a cup of sake 1,25 cup mirin 1 cup dark soy sauce. The saly type, not the sweet one. 1 piece kombu 14 x 18 cm 1 cup katsuobushi or bonitoflakes How to make: Add everything in a saucepan SLOWLY bring it to a boil on medium heat Simmer on low for 5 minutes Pour through a sieve into another container Done. Homemade ramen.

Every now and then, I get #WFH cabin fever and have to get out and about. In the process of heading out to pick up a prescription, I have accidentally found myself in a #ramen shop. This being the case, it seems rude not to grab a bowl of #tonkotsu to accompany my lunchtime reading.
