I had the opportunity to speak with the proprietor of this establishment, a very friendly and kind man. He says he is proud of the authenticity of the recipes and of his choice to revamp his aunt’s restaurant into an exclusively vegan restaurant. He loves what he does and cares about his impact on the environment. I respect the pride he takes in what he does and am proud to recommend this vegan restaurant to everyone reading my blog!

Finally got around to trying out Tibet Stove at the Freo Markets. I got their Beef Momos (Steamed dumplings) and their cold Laphing (Hand-cut noodles in spicy savoury soup). Got medium spicy, perfect level, slight sweat and pleasant mouth tingle but I wasn't suffering. 😛
I was very impressed. Will definitely have to return soon. The Laphing especially is a great summer dish, very refreshing.
Okay. Mind blown. Have discovered a Nepalese/Tibetan dish that utterly mirrors one I ate in Tigray many years ago that I've found hard to find details of. Mind blown. Almost identical but 'red' (unhulled), teff in Tigray used and in the Himalayas it's a millet. Boiled to a cooked paste to access nutrients better and make more palatable then pinched and dipped or rolled in sauce.
