As someone with 4 varieties of apple fruiting annually in my garden I know that the sweetness, acidity, juiciness & texture of each varies with the weather that year (early frost makes fruit sweeter, plenty rain makes juicy, dry years make intensely flavoured but dense), when you harvest the fruit (earlier for more crunch & tang, later for sweetness with risk of floury) as well as where & for how long they’re stored.
Take golden delicious for example. Picked when they are fragrant & their green is turning yellow - they’re sweet & almost floury. Pick while they’re all green, in a year when we’ve had plenty of rain - eaten straight from the tree they are the food of heaven. Narnia apples.
Comparing apples with apples ain’t simple.
