Astringency versus bitterness. Astringency in cider is the drying, rough and puckering sensation caused by tannins literally drying the saliva. It is a touch sensation involving the whole mouth mucosa.
Bitterness from tannins on the other hand is one of the primary basic tastes of the tongue. Bitterness is noted quickly. Astringency takes longer to detect as saliva needs to be affected chemically and lasts longer. #cider #astringency #bitterness #tannins
"Tannin" is from the art of tanning leather, with its roots in Celtic for oak - tannos, and the Latin verb tannare - to tan from the art of using oak bark to convert hides into leather. The chemicals for this were named tannins by the French scholar Armand Seguin in 1796 and are in cider and wine and add to its mouthfeel. Tannins precipitate proteins in saliva and literally dry the mouth! #tannins #cider
Although all domestic apple trees are the same species Malus domestica Borkh. (Borkh. refers to Friedrich August Gottlob Borkhausen, the German botanist who first described and named the species in 1803). Cider apples sure don’t taste the same as eating apples — they're often too bitter or sharp to enjoy raw, but that's because of the higher tannins which makes them perfect for delicious, full-bodied cider when fermented. #cider #tannins

Should cider have Tannins? A session at CiderCon. No brainer for me growing up on “West Country” ciders from England but it was great to partake in the tastings and discussions. Ciders in my mind must display apple characteristics so yes to tannins, polyphenolic aromas, and malic acid.
