Tout part de la SCA (Specialty Coffee Association) et de son protocole strict. Pour être "de spécialité", un café doit obtenir au moins 80/100 par des pros (Q-Graders), sans défauts majeurs.

Mais la SCA, c'est surtout une communauté mondiale qui pousse pour l'excellence, la traçabilité et l'équité.
