Good news! With the new microwave installed I have a “proofing box” again! And an easy* way to heat water for “desired dough temperature (DDT)” purposes. Just in time for today’s weather to be pretty much exactly the temperature I want to proof dough without needing the extra heat of the surface light on the bottom of the microwave! #baking #sourdough

* Yes, I could have boiled water in the kettle and mixed it with cool water to reach the right temperature, but that would have required math.

@yazzea Wenn Dein Brot nicht an der gewünschten Stelle aufreißt, dann lohnt es sich mal, mögliche Ursachen dafür anzuschauen:

1. Untergare – der Teig war noch nicht backbereit

2. Zu flach eingeschnitten – keine Sollbruchstelle

3. Kein oder zu wenig Dampf

My starter has been fed. Other than being dry on the top, it still had a fair amount of structure, and only a slight acetone odor. I did several things before leaving to bolster and strengthen it. Those things seemed to have helped! #sourdoughlife #MySourdoughJourney #sourdough

I did it! Took me quite some trials and errors, but I finally made a great #glutenfree bread! It is soft and so tasty! And it smells just like a good sandwich loaf. I feared the rice flour would come through but it doesn’t at all. I used a mixture of buckwheat, rice and oat flour, potato and cornstarch, salt, little bit of honey, #sourdough and since that did not rise properly over night some yeast, too.
Gosh I hope I can replicate that later, since I didn’t measure anything. 😅
