It wouldn’t be the day without getting into the last can of last year’s syrup harvest.

The Shrove Tuesday waffles and breakfast sausages have been consumed.

Our Eastern Ontario reared teens feel that waffles are necessary to capture the maximum amount of dark amber syrup as they pour it over everything.

By the time Easter is here, the sap should be running, the sugar shacks operating and the new crop will be ready.

Our son & family are visiting this week (school half term), and this evening he cooked us galettes (buckwheat pancakes) with ham, spinach, mushrooms, caramelised onion and a fried egg! Followed up by not one but two sweet pancakes each, with fillings of our choice. I am a happy grandpa! #ShroveTuesday
