Second course: cod fish cakes with horseradish remoulade. I would have liked to have used baccala but didn't have time to get it (hard to do in Georgia!) and rehydrate it. When I made the remoulade I tasted it and thought "this could be spicier....noooo, it'll be fine" 😎. The heat was a bit sneaky.
