Made a new batch of #saurkraut. It got very foamy during mixing, and I thought maybe I hadn't rinsed the bowl enough, but the internet says it happens.

The last batch was very good. Homemade tastes so much better than any brand I've tried from a store. #fermentation

The one across is their D'Wiesen #burger is filled with #saurkraut, swiss #cheese, and #sausage all on a toasted #PretzelBun, with onion rings.
The closer one is a spicy pickle burger with a side of Buffalo chicken #poutine.

Since I am the only one who eats it, just 2 quart jars of red cabbage, carrots and onions.

Same question, in the context of food fermentation: I am looking for help naming things correctly, with the purpose of teaching:

I would like to make the difference between 'Wild fermentation' (when microorganisms occur naturally on the food) and... 'Cultured fermentation'? Or at least when you control which microorganism will inoculate your food, with a starter culture for example.
Any leads?

Three things I learned today:

1) A Ziploc container of leftover sauerkraut, when dropped just so, will spray sauerkraut over an alarming area of the kitchen.

2) A dog, evidently, doesn't like sauerkraut, probably a good thing for the overall air quality of the house.

3) Sauerkraut is hard to sweep up.

This is not an advertisement, no one is paying me, I just looked in my fridge and want to plug Bubbies pickles, sauerkraut, and relish.

They're lacto-fermented (not vinegar fermented), no sugar (in the dill pickles), no artificial ingredients, and their pickles are as good (better) than the ones I make myself.

While I like making my own ferments, theirs are a lot easier.
