I would suggest playing in "#SaferSeas" mode for solo/story stuff in #SoT, a newer game mode they launched in the last 6 months or so. SS Removes other players from the world, removes the chance of PvP.
There isn't much combat in the Monkey Island missions - they use the original game's "insult fighting" system instead of SoT's regular fighting mechanics. Most of the difficulty that way will be in the puzzles and exploration, but there are guides online.
Well, the guy I thought I was just talking to about #seaofthieves #saferseas became toxic and blocked me when I said they "intended it to be a stepping stone into the high seas..." He didn't believe me, but right here at 128 seconds into this official video:
