Biked up Nipfjället and was greeted by a reindeer heard 😍 later in the evening, when I had pitched my tent, I could see them grazing just on the other side of a small lake. Worth every drop of sweat ❤️

Cooked down a bunch of reindeer the other day. I like getting the "scraps" for cheap and taking the time to process it. It's very rewarding.

I just bring the meat to a boil in a big pot of water, scoop off the scum for a nicer texture, and then let it simmer while checking in every hour or so until the meat is tender and the stock is intense.

This time a bunch of bones and rough fatty pieces cooked for six hours with some juniper berries, bay leaf, and allspice. We got eight portions of fall-off-the-bone tender meat and sixteen intense gamey and fatty stock cubes out of it. Only bones and some stubborn connective tissue went in the compost. Well worth it and absolutely delicious. 🤤

I like to freeze the stock in large cubes for ease of use. About one cube is needed for one portion of sauce or soup.
