It’s brisket time!
Thanks to our friends, the Conaways, who gave us this brisket from the last half cow they bought from a local Virginia rancher. These are not as thick as whole packer briskets from Costco or Walmart, so they take a little less time to smoke / cook fully, but the flavor and taste are still amazing!

It may be 22° outside, but it’s been a constant 225° of brisket smoking ambient perfection in my RecTeq RT-700 Bull since 11:20 PM last night. Expecting these 12 pound briskets from Costco to take about 11 hours to reach 205° internal.

Updated with final product. It was amazing! Just a tiny bit of heat from the peppers and the bark was perfectly done on the outside. No way I wouldn't make this again.

Got this recipe from their website. Its called "Mississippi Pot Roast." Chuck roast is going to go on the smoker for 2 hours, after being liberally rubbed, and while that smokes, this concoction of pepperoncini peppers and beef stock is going to heat on the grill. 2 hours, I'll put the beef in the simmering liquids for another 2 hours. Update to come!
