Dagli studi in economia alla vittoria di Masterchef, Matteo Canzi è uscito con il suo libro “Il gusto del perché. Nulla si crea. Nulla si distrugge. Tutto si cucina” (Baldini Castoldi) e si è raccontato al Corriere della Sera, a cominciare dal piatto della sua infanzia: “È la ‘Zuppa di chiodo’, l’antipasto del menù che ho servito nella finale di MasterChef. È il primo piatto che ho cucinato per intero. Avevo otto anni e me lo insegnò nonna Egidia; era una zuppa associata a una filastrocca, ma soprattutto mi ha fatto appassionare alla cucina”.
La chiacchierata è legata ai piatti, per esempio quello legato a un’emozione: “Lo “Zuccam’Ele” per Elena, la mia ragazza: nasce dal ricordo di quando l’ho conosciuta, a Cipro, mentre era in Erasmus. Sul tavolo, c’era un avanzo di risotto alla zucca. Ele tirò fuori delle Pringles e iniziò a raschiare il piatto. L’ho riletto in un risotto alla zucca in due salse, gialla e arancione, con chips di Parmigiano; ho fatto essiccare in forno le bucce di zucca, ricreando le patatine con cui faceva la scarpetta”.
Di piatto in piatto, al Corriere – come già fatto durante il cooking show – spiega che sono stati i suoi amici a convincerlo a partecipare a Masterchef. I genitori?” All’inizio, mi dicevano ‘stai attento a quello che fai’, supportandomi con diffidenza. Dopo la vittoria, si sono convinti“. E quanto a Cannavacciuolo che lo vorrebbe nel suo Villa Crespi dice che sì, è vero, ma “è uno step che valuterò più avanti. Ora voglio imparare: da novembre frequenterò l’Alma, la scuola di alta cucina di Colorno”. Cosa mangia un giovane aspirante chef come Canzi? “Essendo molto impegnato, non riesco a stare ai fornelli. Mi cucino la pasta, vado al McDonald’s. Mi va bene qualsiasi cosa”.

From economics studies to Masterchef victory, Matteo Canzi has emerged with his book “The Taste of Why. Nothing is Created. Nothing is Destroyed. Everything is Cooked” (Baldini Castoldi) and told his story to Corriere della Sera, starting with the dish of his childhood: “It’s the ‘Zuppa di chiodo’ (Nail Soup), the starter of the menu I served in the MasterChef final. It’s the first dish I cooked entirely. I was eight years old and my grandmother Egidia taught it to me; it was a soup associated with a nursery rhyme, but above all, it sparked my passion for cooking.”

The conversation is linked to the dishes, for example one tied to an emotion: “The ‘Zuccam’Ele’ for Elena, my girlfriend: it’s born from the memory of when I met her, in Cyprus, while she was on Erasmus. On the table, there was a leftover of butternut squash risotto. Elena pulled out some Pringles and started scraping the plate. I recreated it in a butternut squash risotto in two sauces, yellow and orange, with Parmesan chips; I dried the pumpkin skins in the oven, recreating the chips with which she made the sauce.”

From dish to dish, at Corriere – as already done during the cooking show – he explains that it was his friends who convinced him to participate in Masterchef. His parents? “At first, they’d say ‘be careful about what you do’, supporting me with suspicion. After the victory, they believed it.” And regarding Cannavacciuolo who wants him in his Villa Crespi he says yes, it’s true, but “it’s a step I’ll evaluate later. Now I want to learn: from November I’ll attend Alma, the high-end culinary school in Colorno.” What does a young aspiring chef like Canzi eat? “Being very busy, I can’t stand at the stoves. I cook myself pasta, I go to McDonald’s. I’ll eat anything.”
