Doctor Funk by Donn Beach

½ oz lemon juice
½ oz lime juice
¼ oz grenadine
½ oz demerara syrup
¼ oz absinthe
2¼ oz Black Pot Still Rum
1 oz seltzer

Garnish: pineapple frond
Method: Combine all ingredients with ice, shake or flash blend, open pour.

This one is one of my favorite tiki drinks. This version is from the Smuggler's Cove book, page 266. In it Martin Cate emphasizes that a funky Jamaican rum is needed to stand up to the hearty dose of absinthe. Jamaicans are far and away my favorite rums so this one always hits the spot for me. Pictured in the background is Hamilton's black pot still, which is the specific rum called for in this drink. However, if you don't have it on hand you can blend two rums (a black and a pot still) to land mostly in the same place, as is praxis in tiki anyway.

½ oz SC honey syrup
¾ oz SC molasses syrup
½ oz Amaro di Angostura
1½ oz Blended Aged Rum ❸
1 oz Black Blended Rum ❺
¼ oz overproof Pot Still Lightly Aged Rum ❶
1 oz seltzer

Method: combine all ingredients with crushed ice, shake or flash blend, open pour with gated finish.
Garnish: edible orchid, mint sprig, swizzle stick

Honey absolutely dominates this one’s evolution! A sticky mouthfeel with delicious lingering aftertaste that only gets stronger as you sip. Found in Smuggler's Cove book, p93.
