250g flour
250g med oatmeal
125g brown sgr
<2 tsp ground ginger
1 egg
tin treacle (or half syrup)
125g butter
150ml milk
1tsp bicarb
choc-chips!

mix flr/meal/ginger
melt sgr/butter/treacle
add a little milk + beaten egg
combine
dissolve rest milk bicarb and add immediately prior to baking to raise the bubbles
line roasting tin with buttered baking paper
1 hour moderate oven (150 degrees Celsius with fan)

Parkin in a breadmaker final update and review. I wrapped the parkin up for a few days as recommended, and it improved, becoming less dry. However, it still was not as good as an oven baked version. Another factor may have been the oatmeal as it's become uncommon on many supermarkets, and I used a version that was more rough and chewy. It was still tasty though, not a fail.
