Balcony Garden 2026 says hello. 🥰

This year we have returning awesome trio (Basil, Thyme and Oregano) and two great premieres: Balcony Tomatoes, which I am very looking forward to see how they will come out aaaand lovely Dahlia, which I never had before.

The scent of herbs is wonderful and looking at all the plants brings a lot of happiness into my heart.

#Recipe Vegiful #bean and #potato ‘nachos’
Fed 2 adults and 2 kids with leftovers. No complaints about it being #Vegetarian #30Minutes

3 #SweetPotatoes and 3 potatoes
1 red #onion
1 can #tomatoes
1 can #BlackBeans
#OliveOil
#OnionPowder
#Basil
#Oregano
#Cumin
#Corriander
#Paprika
Squirt of liquid sweetener.
Cheese (or #vegan alternative)

Thinly slice potatoes and sweet potatoes. Toss with olive oil and onion powder. Roast until crispy.
Chop red onion. Add to pan with oil and cook till translucent. Add tomatoes and beans. Add spices and salt to taste. I added a squirt of liquid sweetener to replicate the taste of readymade sauces.
Assemble with crispy potatoes in place of nachos.
I served it with iceberg lettuce and wraped spoonfuls in lettuce leaf parcels for a crunch.
I also sprinkled #saeurkraut on mine.

Today for lunch, my chef prepared a vegetable quiche: carrot, leek, bell pepper, zucchini, tomato, onion, scallion, oregano, and goat cheese…
