You ever have one of those days where you try something new in the kitchen, and end up just hitting it OUT OF THE PARK somehow? That was today for me.

I had a ton of lentils in the fridge that needed eating up, so I processed them into veggie "meat" balls, fried them up, and had them with leftover naan and a little plain yogurt. The bowl on the bottom here has a kale/cabbage salad with ginger dressing, cut up halo mandarins, and pecans from my tree outside. It was amazing.

When I order from an Indian restaurant, I always get an extra naan bread to use as a pizza base the next day. Bit of tomato paste, pesto, grated cheese and garlic flakes then chuck in oven till cheese is melted.
