Apple Hot Take: 8 GB of memory is completely fine for an entry-level consumer Mac.

I've got the bare-minimum spec'd M1 Mac mini, bought a couple months after it was released in 2020. Works great. Does everything I need it to, and more, and FAST. Dollar-for-dollar, best computer purchase I ever made.
