A rustic focaccia made with:
- Wholemeal rye flour
- Wholemeal oat flour
100% hydration
10% extra virgin olive oil
Amazing scent and flavor, derived in particular from rye, which gave this focaccia earthy and honeyed notes, while oats smoothed the edges with its sweetness, rounding off the flavor.
A dough that is technically difficult to manage due to its high hydration with very low gluten flours (rye) and gluten-free flours (oats).
Very delicate even in the double phase of leavening, with perfectly marked times to prevent it from becoming sour.
Gentle and prolonged cooking to dry the internal humidity.
